Lemon Bars

- Crust
1/2 lb of salted butter
1/2 cup granulated sugar
2 cups AP flour
- Lemon Filling
6 eggs
3 cups granulated sugar
1 cup lemon juice
2 tbsp lemon zest
1 cup AP flour
- Extras
Powdered Sugar for dusting
Directions
- Line a 9×13 dish with parchment paper
- Cream butter and sugar together in stand mixer with paddle attachment, then slowly add flour.
- Dump mixture and form a ball. Then press into 9×13 lined pan. Chill.
- Preheat oven to 350 degrees.
- Bake chilled crust for 15-20 minutes (or until lightly browned). Let chill again while making filling.
- Whisk together the eggs, sugar, lemon zest, lemon juice, and flour.
- Pour over the crust and bake for 30 to 35 minutes, until the filling is set.
- Remove parchment from pan, let cool before dusting and cutting.
